Yeah, I can eat that! Oh, so tasty banana pie!


Oh, me la sono appena gustata questa deliziosa colazione. Era da molto che non preparavo dei dolcetti (colpa di giorni difficili e ancora problemi di pancia, mah...)
Ieri sera, annoiata a morte, seduta sul divano avevo voglia di fare qualcosa. Neanche il "Ghost whisperer" che c'era in tv attirava la mia attenzione...Il ricamo stava li sul tavolino, ma io mi ero stuffata, non mi andava di ricamare. Mio marito in questi giorni sta producendo vino e quindi e impegnato dalla mattina alla sera. Non sapevo cosa fare e mi sentivo un po depressa. E allora ho deciso, va beh, faccio un dolce. Magari poi lo regalo a gualcuno. Entrata in cucina mi sono venuti in mente dei pensieri: Ma perche pensi sempre agli altri? E fai per una volta qualcosa anche per te, no! Cavoli, se io non me lo inventavo, allora chi l'avrebbe fatto. Si, ma che fare? Ciocolato - vietato, cacao- pure..., zucchero - 5 minuti dopo, dolori da far paura, uova - disturbi addominali...
E che fare? Va beh, ho deciso di provare a fare qualcosa senza alcun ingrediente che mi avrebbe fatto male. Tanto era una prova... Ho tirato fuori tutto quelo che c'era in frigo e nel cassetto con i prodotti per i celiaci e mi sono data da fare.
Quando ho finito e ho visto il risultato, molto invitante..., era ormai tardi e non potevo assagiarlo, anche perche avevo usato una banana che stava per andare male e a me le banane calde non tanto piaciono. Quindi, l'ho lasciato li, coperto con un tovagliolo, dicendomi che se avevo fortuna domani di sentirmi per una volta bene, l'avrei assagiato.
Beh, la fortuna non l'ho avuta ma non ho resistito a questo dolcetto cosi invitante che mi aspettava sotto il tovagliolo. Ottimo risultato! Sicuramente caldo non sarebbe stato cosi buono, come da freddo stamattina.
Cosi, me la sono inventata una ricettina buona: senza zucchero, senza uova, senza glutine, senza latte, senza lieviti....

"Banana crumble pie" squares

ingredienti: per un dolce piccolo
125 gr farina di riso
60 gr margarina vegetale (100%)
1 cucchiaio di NoEgg (Orgran)
3 cucchiai d'acqua calda
5 gocce di dolcificante liquido (Tic 0 calorie)
1 banana matura
1/2 tazza di salsa di mele al naturale
1/4 tazza di granella di mandorle (nocciole, noci, pistachi...)
una manciata di uva passa (io non avevo al momento, ma si puo aggiungere)
1/4 cucchiaino canella in polvere
1 cucchiaino buccia di limone

Premessa che il NoEgg della Orgran l'ho usato tantissime volte con un risultato orrendo ogni volta ormai da più di un mese. Alla fine l'ho lasciato nel cassetto con l'idea di buttarlo un giorno visto che faceva proprio schifo come prodotto. Questa volta non avevo scelta. Non potevo usare le uova. Gli albumi solo, non danno un buon risultato se si usano farine senza glutine. Quindi dovevo riprovare, ma senza guardare le loro istruzioni sulla confezione. Basta! Faccio da me stavolta.
Acendete il forno a 180°C. Coprite una teglia (piccola) quadrata o altra forma a scelta con carta da forno.
Mettete la farina di riso in una ciotola e aggiungete la margarina vegetale. Con le mani lavorate i due ingredienti, strofinando la margarina tra le dita. Fino a che avrete ottenuto un composto granuloso nella ciotola. Come delle molliche di pane. Uguale alla pasta frolla. A questo punto, fate un bucco in mezzo.
In un piatto fondo o una ciotolina, unite il NoEgg con l'acqua calda (tiepida) e mescolate con un cucchiaino fino a che sia completamente liscio senza grumi. Aggiungete il dolcificante liquido (se volete piu dolce, aggiungete qualche goccio in piu) e mescolate di nuovo. Aggiungete questo composto alla farina. Mescolate con le mani. A me a questo punto e risultato un po duro e ho aggiunto 2-3 cucchiai di acqua calda. Date una veloce mescolata al impasto con le mani, solo fino ad unire tutto in una palla compatta. Tagliate 1/4 dall'impasto e lasciatelo da parte. Trasferite il resto nella teglia ed appiattitelo con le mani o con il fondo di un bicchiere. Lisciatelo bene sulla superfice e infornate nel forno preriscaldato per circa 20 minuti.
Passato questo tempo, togliete dal forno ma non spegnetelo.
Spalmate la salsa di mele sulla base cotta. Sbucciate la banana, affettatela velocemente e appogiate le fettine sopra la salsa di mele. In una ciotolina unite la pasta lasciata da parte con la granella di mandorle, la canella, la buccia di limone e l'uva passa se la usate e mescolate con le mani fino a farlo diventare granuloso. Coprite le fette di banana con questo impasto. Infornate per altri 25-30 minuti. Fino a che sia ben dorato ma non brucciato.
Sfornate e lasciate che si raffreddi completamente a temperatura d'ambiente. Molto meglio se la fate come me la sera prima e lo servite il giorno dopo. E croccande. Dolce per via della banana e il dolcificante, ma non troppo. Una sorta di banana crumble pie:) Ottimo per il caffè. E nonostante ci sia la margarina vegetale, non e per niente pesante.




I've just tasted this delicious banana breakfast! It was so long time sice I've baked some sweet treats (reason: a difficult painful days.. again trobles with my tommy...)
Yesterday evening, sitting on the sofa feeling so bored, I needed something to do. The tv show "Ghost whisperer" which was going on the FoxLife wasn't attracted my attention ither... I had some embroidery on the table waiting for me, but I was tired of it. I had no wish to do it. My husband is very busy with producing wine in these days, so I stay all alone at home wondering what to do. I was feeling lonely and a little depressed. So, I decided to make something sweet. Even if I can't eat it, may be I'll give to someone else later.
Once I got in the kitchen, some thoughts came into my mind. Why are you always thinking only about the others? For once, do something for yourself! O'kay, but what could I do? Chocolate - prohibited, cocoa powder - ither, sugar - 5 minutes later I start to feel a terrible pain in my stomach, eggs - intestinal desseas... Without any idea of what to do, I took everything I found into my fridge and my drawer and I left my hands to do what they wanted.
When I removed from the oven the result, which was looking very tasty, it was already too late for me to try it (docters avoided me to eat after 19.00h at the evening), so I just covered it with a paper napkin and thought: If for once in my life time I'm so lucky to feel good tomorrow, I'll give it a try for breakfast. Even because I've used one over ripe banana that I had and the taste of warm bananas is not of my favorites. I like it cold.
Well, I wasn't lucky again today, but I couldn't resist of that inviting sweet pie which was there, waiting for me under the paper. Wonderful result! Terrific taste! Sugar-free, gluten-free, egg-free, diary-free, yeast-free banana crumble pie!

"Banana crumble pie" squares/bars

ingredients: for one small pie
125 g white rice flour
60 gr vegetable margarine (such as Earth Balance)
1 tbsp NoEgg "Orgran" eggreplacer
3 tbsp lucke warm water
5 drops liquid sweetener (0 calories)
1 ripe banana
1/2 cup unsweetened applesauce
1/4 cup ground almonds (nuts, hazelnuts, pistachios....)
a handful of raisins (optional)
1/4 tsp ground cinnamon
1 tsp fresh grated lemon peel

Let me tell you first, that I have used the NoEgg Orgran's egg replacer for a mounth now, and each time with having a terrible results. Even if there are the instructions on the box, everything was remining raw inside and wasn't rising at all. I left it in my closet, sure that one day I'll throw it away, as its horrible product. This time I had no choice. I couldn't use eggs. Egg whites doesn't work well ither with the gluten-free flours. So I had to give it one last chance. But this time, doing by myserf, without following their instructions.
So, turn on the oven to 350°F. Line a small square baking pan with baking paper.
In a laege mixing bowl place the flour and add the vegetable margarine. Work with you fingers both ingredients until it's crumbly. Exactly as you do for the pie pastry. Make a well in the center.
In another bowl, pour the eggreplacer and add the water. whisk with a spoon until it's smooth without any lumps. Add the liquid sweetener and whisk again. Stir in the flour mixtur. Start to work dough very quickly with your hads. If it's too dry (as mine was) add 2-3 more tbsp warm water. Form dough with your hands, cut 1/4 from it and set aside. Place the remaining dough into the pan and flat it with your hands or the back of a glass. Bake in the preheated oven about 20 minutes.
Remove from the oven. Do not turn it off.
Spread the applesauce over the top of the baked base. Peel and slice quickly the banana. Arrange the fruit slices over the applesauce. In a small bowl combine the 1/4 dough with the ground almonds, the cinnamon, the lemon peel and raisins (if you use them). Stir with your hands until crumbly, then cover the banana slices. Bake about 25-30 more minutes, until it's golden brown and crispy.
Remove from the oven and allow to cool completely on a room temperature. Better if you do what I did. Make it the evening before and serve it sliced the next morning for breakfast. You can dast it with confectioners' sugar if you want just before serving. It's perfect for the coffee! It's crispy, sweet becouse of the banana, but not over sweet.

    E difficile davvero, sopratutto quando si sta in compania e tutti mangiano tante cose buone, che io purtroppo non posso assaggiare. A tavola sono sempre l'unica che solo parla...)
