End of summer salad



Per il nostro pranzo (dietetico ) di ieri, ho preparato forse l'ultima insalata fresca, visto che e in arrivo l'inverno e i piatti dovranno essere più caldi. Avevo un po di fagiolini freschi in frigo e volevo cucinarli in qualche maniera prima che diventino gialli. Sono partita con l'idea di farli al solito modo, con pomodoro e patate, ma poi durante la cottura mi sono detta, perché non faccio per una volta qualcosa di diverso! Il tempo e ancora buono, c'e sole, intorno a mezzogiorno fa anche ancora caldo. Una bella insalatina light ci starebbe proprio bene:) L'idea mi e venuta da una ricetta spagnola che mi aveva dato mia cucina che abita a Madrid, sempre per insalata di fagiolini, solo che loro aggiungono il mais dolce. Ma visto che il mais non piace al mio adorato maritino, l'ho personalizzata un pochettino.

Insalata fresca di fagiolini

ingredienti:
300 gr fagiolini freschi
1 piccola cipolla rossa di Tropea
2 pomodori piccoli i 1 grande
3-4 foglie fresche di basilico
sale a gusto
1-1/2 olio d'oliva
1 cucchiaio aceto di mele

Tagliate le estremità dei fagiolini da entrambi i lati. Metteteli in una scolapasta e lavateli bene sotto l'acqua corrente. Trasferiteli poi in un pentolino e riempite con acqua. Coprite e lasciate sopra la fiamma alta. Cuocete fino a che i fagiolini sono teneri. Fino a che la forchetta entra senza problemi.
Una volta pronti, scolate dall'acqua e tuffateli in una ciotola da portata. Salate a piacere, aggiungete le foglie di basilico finemente tritati. Sbucciate la cipolla ed affettatela a juliene fina. Aggiungetela all'insalata. Sbucciate i pomodori, tagliate a metà ed affettate a juliene. Aggiungete all'insalata. Aggiungete l'olio e l'aceto e mescolate bene. Lasciate raffreddare a temperatura ambiente e servite.
Si conserva per due giorni anche in frigorifero ed e ottima anche fredda.


This was for our light lunch yesterday. I had some fresh green beans in my fridge and I wanted to make them somehow before they get yellow in color:) It was pitty to let them go bad. So, I started to cook thinking to the usual warm green beans with potatoes, but in the middle of cooking I thought, why not trying something different. So I remember about a spanish recipe which my cousin gave me a time ago. She lives in Madrid about 7 years now. The only difference is that in Spain, they add some canned sweet corn but my husband doesn't like it, so I had to personalize it a little bit. Here it is:

Green beans fresh salad

ingredients:
300 gr fresh green beans
1 small red onion
2 small tomatoes or one large
3-4 fresh basil leaves
salt to taste
1-1/2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar

Cut the edges of the the green beans from the both sides. Pour into a colander and wash well under the cold water. Pour into a deep saucepan and fill with water. Cover and pour over a high heat. Cook until the green beans are well tender. Once ready, dry them from the water and drop into a serving salad bowl.
Peel the tomatoes and cut in half, then slice into a thin juliene. Peel the onion and slice into a thin juliene. Add to the green beans. Finely chop the fresh basil leaves, then add to the salad. Salt to taste. Add the oil and the vinegar. Stir well.
Allow to cool at room temperature, then serve in the center of the table.
Keep in the refrigerator up to two days. It tastes great even cold.
