Biscottini con burro d'arachidi


E dopo aver fatto il burro di arachidi, potevano mancare i biscottini oggi con il nostro caffè per colazione? Certo che no! Sono una specie di frollini che ho fatto in due varianti: con e senza glutine. Quelle senza glutine sono meno grassi, usando solo l'albume invece dell'uovo intero. Sfortunatamente, senza glutine non sono venuti bene e quindi ho dovuto rifarli usando l'uovo intero. Potevo fare di nuovo una prova con il Noegg, ma visto la qualità pessima di quel prodotto ho preferito di non sprecare inutilmente farina preziosa (e anche molto costosa!!!)

Biscottini con burro d'arachidi
(versione con glutine)

ingredienti:
250 gr farina per dolci
100 gr zucchero di canna
1 cucchiaino lievito per dolci
1 bustina di vannillina
la buccia grattugiata di 1/2 limone
60 gr burro d'arachidi
2 albumi
1 cucchiaio olio leggero di mais (evo)
arachidi tostati e sbuciati per decorare (facoltativo)

Accendete il forno a 175°C. Coprite la placca da forno con carta da forno.
In una ciotola grande unite la farina con lo zucchero, il lievito, la vannillina e la buccia di limone. Mescolate per bene.
In un altra ciottola sbattete leggermente gli albumi, aggiungete il burro di arachidi e sbattete con una forchetta fino ad amalgamarli bene. Aggiungete l'olio e mescolate di nuovo.
Unite i due composti. Fate una prima mescolata con la forchetta, poi cominciate a lavorare con le mani per unire i due composti in un impasto. Se e tropo appicicoso, spolverate con un po di farina e continuate ad impastare dentro la ciotola. Lavorate con le mani fino a che l'impasto non appicica.
Trasferitelo sul piano di lavoro leggermete infarinato e stendetelo in una sfoglia di circa 1 cm. Tagliate nella forma desiderata e trasferite i biscotti sulla placca ricoperta di carta da forno. Mettete un arachide tostata e sbuciata nel centro di ogni biscotto e schiaciatela leggermente per farla entrare fino alla metà. Spalmate leggermente i biscotti con latte. Infornate per circa 15-17 minuti.
Sfornate e se volete spolverate di zucchero a velo. Lasciate raffreddare quasi completamente e poi servite.

Versione senza glutine:

ingredienti:
250 gr farina per dolci gf
(io ho usato mix C di "Schar")
100 gr zucchero di canna
1 cucchiaino levito per dolci gf
(ho usato easyglut)
la buccia grattugiata di mezzo limone
50 gr burro di arachidi
1 uovo grande intero
2 cucchiai olio leggero di mais
arachidi tostati non salati * per decorare
(*certificati senza glutine)

Tutto il procedimento e uguale. Infornate a 180°C per 12-15 minuti. Per spolverare con zucchero a velo io uso la marca "Easyglut" disponibile in tutti i grandi e ben forniti supermercati nel reparto "prodotti senza glutine". Confezione di colore Giallo/Bianco.



After I made my own creamy peanut butter, couldn't I not bake some yummy peanut butter biscuits for our breakfast this morning? Of course not! This are some kind of personalized shortbreads which I made in two different versions: with and without gluten. The gluten version is lighter than the other because I've used only the egg whites. Unfortunately, the gluten free version didn't came out well. Egg whites only doesn't work well in the gluten-free baking. So I had to repat it using the whole egg and changing some misures. I could try once again to use the Orgran's Noegg substitute, but with the terrible quality of this product, I preferred to not wast precious flour (and also very expensive!!!!)

Peanut butter Biscuits
(gluten version)

ingredients:
250 gr cake flour
100 gr brawn raw sugar
1 tsp baking powder
1 tsp pure vanilla extract
the fresh grated peel of 1/2 lemon
2 egg whites
60 gr creamy peanut butter
1 tbsp light corn oil
toasted and peeled peanuts for decorating (optional)

Turn on the oven to 350°F. Line a cookie sheet with a baking paper.
In a large bowl combine flour with sugar, baking powder, vanilla extract and lemon peel. Stir.
In another bowl beat lightly the egg whites. Add the peanut butter and whisk well to combine. Add the oil and whisk again.
Make a well in the center of the flour mixture and add the liquid mixture. Stir first with a fork to combine well. Then start to knead with your hands. If dough is still too sticky, sprinkle lightly with flour and knead again until dough is done. Should be very much like pie pastry, but a little softlier.
Roll dough onto a lightly floured surface and roll with the rolling pin into a 1 cm thin crust. Cut with cookie cutter (form to taste) and transfer onto the prepared baking sheet. Place one toasted peanut in the center of each biscuit and dip it in half with your finger. Brush lightly with milk (rice milk). Bake in the preheated oven about 15-17 minutes. Cool on a wire rack.

Gluten-free version

ingredients:
250 g gf cake flour
(I've used mixC dr. Schar)
100 g raw brown sugar
1 tsp gf baking powder
the fresh grated lemon peel of half lemon
1 whole egg
50 gr creamy peanut butter
2 tbsp light corn oil
toasted unsalted peanuts*
(only if certificated guten free)

Everything is the same. Bake at 375°F for 12-15 minutes.
