Peperoni locali in conserva

Questa preparazione in Bulgaria si chiama "Turscia". Si prepara d'estate per essere conservata diversi mesi ed essere in fine servita durante l'inverno. Ha il sapore dei sott'aceti italiani che si vendono nei supermercati. Non esiste un bulgaro al mondo che non l'adora sopratutto servita insieme a cavolo marinato e fette di lardo alla piastra.


Turscia

conserva bulgara di peperoni locali

ingredienti:
2,5 kg peperoni locali
100 sale
250 gr zucchero
750 ml aceto di mele
25 ml olio
1 cespo di sedano
1 kg carote
2 cucchiaini bicarbonato di sodio

Si tagliano i peperoni in quarti. Si sbucciano e si grattuggiano le carote. Le foglie dal sedano si dividono dal tronco, ma si conservono. Si taglia il sedano (tronco) a pezzettini.
In una ciotola grande e capiente si uniscono i peperoni, le carote e il sedano e si cosparge abbondantemente con il sale e lo zucchero. Si mescola per bene, si copre e si lascia in un posto buio per 24 ore. In questo tempo la verdura lascerà un liquido.
Dopo 24 ore, il liquido dalla verdura si unisce con l'aceto e l'olio in una pentola e si fa bollire per circa 10 minuti, dal momento in qui cominciano le prime bollicine. Una volta tolto dal fuoco si aggiunge il bicarbonato di sodio e si scioglie.
Si riempono i boccaci sterilizati con la verdura marinata, le foglie del sedano finemente trittate e una manciata di pepe nero in grani. Si copre tutto con il liquido caldo. Si chiudono bene e si lasciano raffreddare capovolti.
Servite in inverno come antipasto.

This way to prepare the smaller kind of pappers is called "Turshia" in Bulgaria. It's usually made in the summer to be then left in a dark and cold place for a few mounts and serve in the winter. Its flavor is very much like the pickles that are sold in the supermarkets.
There isn't a Bulgarian in the world that doesn't love it, especially served with pickled cabbage and slices of bacon on the griddle.

Small peppers in a jars

ingredients:
2.5 kg small size peppers
100 g salt
250 g white sugar
750 ml apple cider vinegar
25 ml light corn oil
1 head of celery
1 kg fresh carrots, grated
2 tsp baking soda

Cut the peppers into quarters. Divide the leafs from the celery, but keep them in the refrigerator. Cut the celery trunck into small pieces.
In a large and deep bowl combine the peppers, the grated carrots and the celery. Add the salt and the sugar. Stir very well with a wooden spoon. Cover and allow to stay in a dark place for about 24 hours. After that time the vegetables will release their oun juice.
After that time, combine in a saucepan the vegetable juice with the vinegar and the oil. Heat it over medium heat. Allow to boil about 10 minutes, starting to count from the moment when the first bubbles start to form.
Remove from the heat and add immediately the baking soda. It's neccessary to keep the fresh color of the vegetables.
Fill a large sterilized jars with the marinated veggies. Add a handful of fresh black paper and the finely chopped celery leafs which you kept the day before. Fill the jars with the hot liquid, a ladle at a time, until you cover all vegetables. Close well the jars and allow to cool placed up side down in a dark place.
Keep in the closed and open the first jar in the winter as an appetizer.
