Light summer dinner....


Faggiollini in salsa di limone

ingredienti:
200 gr faggiollini verdi freschi
1 cucchiaio di farina
(gf: amido di mais)
il succo di 1 limone
prezzemolo fresco
pepe nero in grani
sale
1 spicchio d'aglio, sbuciato ed affettato a juliene
1 foglio di alloro fresco
2 cucchiai di olio d'oliva o evo

Lavate i faggiolini freschi e tagliate le estremità dai due lati. Metteteli in una caseruola e copriteli con acqua e aggiungete il foglio di alloro. Portate a bollore sul fuoco alto e cuocete coperti fino a che la verdura e tenera, intorno ai 30-40 minuti. Dipende dalla freschezza della verdura.
Una volta teneri, scolate ma conservate 1/2 bicchiere dall'acqua di cottura. Elliminate il foglio di alloro.
Sul fondo di un tegame unite l'olio e la farina (amido di mais). Mescolate con il cucchiaio di legno energicamente per rendere tutto una salsina bianca. Mettete sul fuoco lento. Nel momento in qui cominciano a formarsi le prime bollicine, mescollando velocemente con un cucchiaio aggiungete il cucco di limone e l'aglio affettato a juliene. Mescolate e tufatevi dentro i faggiollini. Salate, aggiungete il pepe nero in grani (quanto dipende dal vostro gusto) e l'acqua di cottura che avete conservato prima. Mescolate, alzate la fiama a medio alta, coprite e cuocete fino a che il liquido si riduce a meno dalla metà. Non deve asciugarsi troppo, ma neanche rimanere come zuppa. Dovra rimanere piu o meno un dito di salsa.
Allontanate dal fuoco. Dividete i faggiollini in due piatti da portata, aggiungete due/tre cucchiai dalla salsa al limone e cospargete con prezzemolo fresco sminuzzato.
Servite subito.




Fresh green beans

with lemon sauce


ingredients:

200 gr fresh green beans
1 tbsp white flour
(gf: cornstarch)
the juice of 1 lemon
fresh parsley, finely chopped
1 fresh garlic clove, peeled and sliced
black paper
1 fresh bay leaf
2 tbsp olive or corn oil
salt (to taste)

Cut the ends from the both sides of the green beans and wash under a cold water. Pour into a deep saucepan and fill with water. Add the bay leaf and cover. Cook over high heat until it's tender, about 30-40 minutes. Depends of how fresh are the beans. Once the green beans are tender, dry them but keep 1/2 cup from the water. Remove the bay leaf.
In a large frying sausepan combine the flour(cornstarch) with the oil and whisk to bring it into a saucy consistency. Pour over low heat. Once the first bubbles starts to form, add the lemon juice and whisk again strongly. Add the sliced carlic clove and the green beans. Add salt and black paper to your taste. Stir and cover. Bring the heat to high and cook, stirring occasionally until the liquid is almost evaporated. It has to be not too dry and not too liquid.
At this point remove from the heat and divide the beans into a two serving dishes. Add 2-3 tbsp from the lemon sauce, sprinkle with some fresh chopped parsley and serve immediately.
