Spiced Prugne preserves in a honey sauce!


Dall'libretto "Scuola di cucina dietetica" comprato all'aeroporto di Pisa una ricetta facilissima per conservare le prugne. Davero gustose. Non credo che sono poi tanto dietetiche, ma.... il gusto e stràordinario!




Prugne speziate al miele

ingredienti:
1 kg di prugne rosse o gialle (io avevo gialle al momento)
500 ml miele milefiori
chiodi di garofano (intorno a 1/2 cucchiaio)
3 stecche di canella
zenzero

Lavate ed asciugate dei vasetti di vetro in quale saranno le prugne. Cospargete il fondo di ognuno con ghiodi di garovano e aggiungete una leggera spolverata di zenzero.
Lavate le prugne sotto acqua corrente, poi asciugatele con uno strofinaccio e tagliate loro un poco il picciolo.
Mettetele nei vasetti preparati scuotendole di tanto in tanto in modo che rimanga pocchissimo spazio vuoto. I miei erano di 330 ml.
Trasferite il miele in un pentolino a mettete sul fuoco basso. Cuocete fino a renderlo liquido. Io ho usato il forno microonde a temperatura Media per circa 1 min.
Una volta che riempite i vasetti con le prugne, aggiungete una steccha intera di canella in ogni vasetto. Ricoprite con il miele liquefatto, tanto quanto ne occorre per coprire le prugne a filo. Chiudete con il coperchio e sterilizate in acqua bollente per circa 40 minuti, avendo cura di non togliere i vasi dall'acqua fino a quando questa non si sara completamente raffreddata.
A questo punto sistemateli in un luogo fresco e buio, rigirandoli almeno una volta al giorno per la prima settimana. Dopo la seconda settimana, sono pronti da gustare. Possono essere mangiate da sole, come ripieno per torte e crostate o come ripieno per il soufflè al cioccolato.





From the little book "School of a light cooking" that I bought while I was waiting for my flight in the Pisa's airport, here is a very simple and delicious recipe for prugne preserves. I really don't think these are so light as they say but the taste is amazing.

Spiced prugne preserves

with a honey souce


ingredients:
1kg fresh prugnes (yellow or red, I had yellow this time)
500 ml honey
about 1/2 tbsp fresh cloves
3 long cinnamon sticks
a little bit of ginger (ground)

Prepare three 330ml jars. Sprinkle the bottom of each with cloves and add a dush of ginger.
Pour the honey in a deep heavy saucepan and pour over low heat. Cook until becomes liquid. I've used my new microwave oven, on Med. for about 1 minute.
Wash the prugnes and cut lightly the bottom of each with a knife. Fill the jars with the fresh prugnes, trying to leave as less free space as it's possible. Add one cinnamon stick in each jar. Fill with the liquid honey, enough to cover the prugnes. Close the jars.
Fill a deep saucepan with water. Pour over high heat. Once it starts to boil, add the jars and let boil about 40 minutes. Turn off the heat, but leave the jars inside the saucepan. Allow to cool completely before removing them from the water.
At this point keep the jars in a fresh and dark place, takeing care to shake the jars at least one time at day for one week. After the second week of time for resting, the preserves are ready for eat.
These can be tasted plain, with yogurt... as a filling for cakes and pies... especially as a filling for a chocolate soufflè.

  2. Grazie, Barbara, un buon fine settimana anche a te. E vero, d'inverno, quando fuori fara freddo, queste prugne saranno un dolce ricordo per l'estate passato e porteranno siguramente il pensiero per il prossimo che verrà. Sono spettacolari anche di gusto, un mix di spezie e dolcezza davero unico. Non vedo l'ora di preparare a mio marito un soufflè al cioccolato con una di queste prugne come cuore ^-^
