what I eat today!



Insalata "Calda-Fredda"
(Vegan)

ingredienti:
1 latugha romagnola
2 carote larghe
300g Tofu (io ho usato il mio fatto in casa, quindi non era abastanza duro come quello "Firm" che si vende in comercio)
1 piccola cipolla finemente trittata
sale

per il dressing:
1 finocchio fresco
1 cucchiaio succo di limone
2 cucchiai olio d'oliva
1/4 tazza d'acqua
1 cucchiaio aceto di mele
l'erba che si trova sul finocchio fresco
sale
un pizzico di zenzero

Cominciate con riempire a metà una pentola con acqua. Mettetela sul fuoco alto.
Tagliate il finocchio, ma conservate l'erbetta di sopra. Lavatelo bene. Quando l'acqua bolle, aggiungete il finocchio, coprite e cuocetelo fino a che si e ben cotto. Scolatelo e tenetelo ben coperto per essere caldo.
Lavate la latugha e tagliatela grossolanamente in una salatiera. Tagliate fine la cipolla e aggiungetela alla latugha.
Mettete sul fuoco medio un tegamino. Sbucciate le carote e grattugiatele. Trasferitele nel tegamino e aggiungete un cucchiaio d'olio e 1/4 tazza d'acqua. Coprite con un coperchio e cuocete mescolando ogni tanto fino a che l'acqua in ecesso evapora. Allontanate dal fuoco e lasciate coperto. Scolate il tofu. Tagliatlo a strisce, poi a cubetti, non troppo piccoli. Riscaldate un tegamino su fuoco alto. Oleatelo leggermente e aggiungete il tofu. Doratelo mescolando con un cucchiaio, sempre a fuoco vivo.
A questo punto, aggiungete le carote cotte nella salatiera con la latugha e mescolate. Cospargete con il tofu dorato. Salate e mescolate. Trasferite il finocchio cotto nel robot da cucina, aggiungete sale, lo zenzero, il succo di limone, l'olio, l'aceto, l'erbetta del finocchio fresco e l'acqua e frullate il tutto fino a riddurlo in una salsina liquida. Aggiungetela alla insalata, mescolate e servite subito!





Warm'n'Cold Salad
(Vegan)

ingredients:
1 romain letuce
2 large carrots, finely shredded
1 small onion, finely chopped
300 g Firm Tofu (I used my homemade Tofu)
salt

dressing:
1 large fresh fennel
1 tbsp lemon juice
2 tbsp extra virgin olive oil
1/4 cup water
1 tbsp apple vinegar
a dust of ginger
salt

Whash and coarsely chop the romain latuce. Transfer into a serving salad bowl and add the finely chopped onion.
Wash and cut the fresh fennel, but keep the herb you'll fined on it.
Place a small saucepan over medium head and add the shredded carrots. Add 1tbsp of oil and 1/4 cup water, cover and cook until all the liquids are evaporated.
Meanwhile fill a deep saucepan with water about 1/2 full and pour over high heat. When the water start to boil, add the fennel, cover and cook over high heat about 10 minutes, until it's well soft. Dry it and transfer into the food processor. Add salt, the ginger, the lemon juice, the water, the vinegar, the oil, the fennel herb and blend until all is reduced into a white liquid sauce.
Dry the Tofu, cut it into a long strips, then cut each strip into a not too small cubes. Heat a saucepan over high heat, then add the tofu cubes and cook stirring occasionally until lightly brown by all sides.
Add the cooked carrots to the letuce and onion, add the browned tofu cubes. Sprinkle with salt and stir. Cover with the white fennel dressing and stir. Serve immediately.
