vegan onion fritters



Frittelle alla cipolla di Tropea
(Vegan)

ingredienti:
3 large cipolle rosse di Tropea
1/3 tazza di farina (gf: 1/2 tazza di farina di ceci)
1/2 tazza di acqua
1 cucchiaio succo di limone
1 cucchiaino di sale
pepe bianco in polvere
un pizzico di zenzero
la buccia di mezzo limone, grattugiata
un piccolo mazzetto di finocchio selvatico o la erbetta che ce sul finocchio fresco
olio evo per friggere

Tagliate la cipolla fine, non necessariamente troppo fine. Io la taglio a metà, poi ogni metà a meta e la affetto a sottile juliene. Tagliate fine anche il finocchio selvatico.
Coprite il fondo di una teglia con olio evo e mettetelo su fuoco medio.
Mettete in una ciotola la farina, aggiungete lo zenzero, il pepe bianco e la buccia di limone grattugiata. Mescolate con un cucchiaio. Fate un buco in mezzo e aggiungete il succo di limone e 1/2 tazza d'acqua e mescolate. A questo punto aggiungete la cipolla tagliata e il finocchio selvatico. Salate e mescolate con il cucchiaio.
Quando l'olio e abbastanza caldo, prendete dal composto con un cucchiaio e fatelo cadere nell'olio bollente. Ma solo quando e caldissimo. Per sapere se e pronto l'olio, prendete un po di farina fra le dita e lasciatela cadere nell'olio. Se comincia a bollire, l'olio e pronto, altrimenti aspettate.
Friggete le frittelle di cipolla, girandole spesso fino a che sono croccante e dorate.







Red onion fritters
(Vegan)

ingredients:
3 large red onions
1/3 cup flour (gf: use 1/2 cup chickpea flour)
1/2 cup water
1 tbsp fresh lemon juice
the peel of half lemon
1 tsp salt
ground white paper
a dust of ginger
2 tsp finely chopped wild fennel (or the green herb that you'll find on the fresh fennel bulbs)
light oil for deep frying

Clean the onion and chopped it, not too thin. I usually cut in half, then cut each half in two parts and then I slice it into a not too thin juliene. Finely chop the wild fennel or the fresh fennel herb if you use it.
Fill the bottom of a deep frying pan and pour over medium heat.
In a mixing bowl combine the flour with the ginger, the ground white paper and the lemon peel, fresh grated and stir. Make a well in the center. Add the lemon juice and the water. Stir with a spoon. At this point add the onion, the wild fennel and the salt, whisk well.
When the oil is hot enough, drop batter in by tablespoonfuls. Do not drop batter if the oil is not hot. You can make a try to see if it's ready for use when you take some flour between your fingers and let it fall into the pan. If it start to boil, means the oil is hot enough. If not, you should wait.
Fry the onion fritters, by turning them often to the both sides until crispy and lightly brown.
