Pasta cu a "nunnata" o vero "Pasta con la neonata"



200g spaghetti (senza glutine o integrali)
100 g neonata fresca
3 pomodori freschi grandi
olio d'oliva q.b
sale
prezzemolo fresco
1 piccola cipollina rossa, tagliata fine
pepe nero
1 foglio di alloro
1 mestolo di acqua che prenderete dall'acqua di cottura dei pomodori

Mettete la neonata in un collino e lavatela sotto acqua corente mescolandola con un cucchiaio, facendo molta attenzione. Cosi vedrete se ci sono delle sporcizie dentro da quali devono essere pulite. Fate un po di giri con il cucchiaio per un pò, perche di solito quando e fresca la neonata e abbastanza sporca, eh. Una volta polita, lasciatela nello stesso collino a scollarsi dalla maggiorparte dall'acqua.
Se i pomodori non sono abbastanza maturi e morbidi, con un coltello fate una croce sul fondo dei pomodori. Riempite una ciotola con acqua e portatela a bollore sul fuoco alto. Aggiungete i pomodori, coprite e cuocete sempre a fuoco alto fino a che la buccia comincia a staccarsi. Allontanate dal fuoco, scolateli, tenendo da parte un mestolo dall'acqua e togliete la buccia dai pomodori. Poi con una forchetta schiacciateli per ridurli in pure. Mettete sul fondo di una padella olio d'oliva quanto basta per soffriggere leggermente la cipolla, poi tufatevi dentro la neonata e mescolando molto attentamente soffriggete per qualche secondo. Aggiungete il pure di pomodori, sale, pepe nero, il prezzemolo tagliato fine, l'alloro e l'acqua che avevate conservato. Mescolate (sempre con attenzione, leggermente), coprite, abassate la fiama a minimo e cuocete fino a che l'acqua evapora e il sugo si ristringe. Eliminate l'alloro. Poi cuocete gli spaghetti come indicato sulla confezione. Scolatela e tuffatela nella padella con il sugo di neonata, rimettete sul fuoco vivace per qualche secondo, mescolando tutto con il cucchiaio di legno. Dividete nei piatti da portata e servite subbito!

Pasta with New(born) fish

This is a very small transparent fish, which is possibble to buy fresh only in this period "march - april". That's why it's called "newborn" (neonata).

ingredients for about 2 servings:
200g spaghetti (gluten-free or whole-wheat)
100g newborn fish, fresh
3 fresh tomatoes, large
1 small red onion, finely chopped
1 tbsp olive oil
salt
black paper
1 fresh bay leaf
1 tbsp fresh parsley, finely chopped
1 ladle of water, which you'll take from the boil water of the tomatoes

Pour the fresh fish into a colander and wash it under the water stirring very carefully with a spoon, because this fish has a very tender meat and if you use too much power it's possible to damage it. Stirring that way with the spoon you'll be able to control if there is a dirt, which should be clean away. Once you've cleaned the fish, leave it apart in the same colander to strain from the water.
If the tomatoes are not very mature, as usual they are in this period, cut the bottoms with a knife, making a "x". Fill a heavy saucepan with a water and bring to a boil over high heat. Then add the tomatoes, cover and cook about 10 minutes, or until the skin starts to come away from the tomatoes. Dry them, but keep one ladle from the boiling water. Put the boiled and peeled tomatoes into a deep dish and mush them with a fork.
Fill a large saucepan with the oil and pour over medium high heat. Add the chopped onion and cook until almost tender. At this point add the fish and cook about some seconds, stirring very carefully with a wooden spoon. I repeat, be very careful when you stir, because the fish is very tender and it don't have to turn into a puree. Add the mushed tomatoes, the salt, the black paper, the bay leaf and the fresh parsley. Stir and add the water. Cover, reduce the heat at low and cook about 15-20 minutes, stirring occasionally until the tomato sauce is reduced in half. Remove from heat. Cook the pasta as indicated on the box. After you drain it, drop the pasta into the saucepan with the tomato sauce. Turn over the heat and cook on high heat some seconds, stirring with a wooden spoon to combine well. Divide the pasta into the serving dishes, sprinkle with some fresh grated Parmesan cheese and serve immediately.
