Low-fat italian breaded chicken


La cotoletta piu amata di tutti gli italiani (e non solo^_^) in versione senza sensi di colpa. Vi assicuro che il gusto e anche migliore perche e piu leggera, senza eccessi di olio e in questo modo permette di godersela anche meglio. Sono due anni ormai che le mie cotolette le preparo in questo modo. Piacciono anche al mio tesoro, nonostante a volte la classica maniera fritta gli manca, lui stesso riesce a notare la differenza nelle sensazioni dopo. Fritto: pancia gonfia. Grigliata: pancino leggero . Fritta: una cotoletta sola. Grigliata: due^_^ Per prepararla bastano solo pochi cambiamenti.



Cotolette di pollo senza grassi

(o almeno meno di quelle classiche)

ingredienti:
petto di pollo (quanto dipende di quante cotolette dovete preparare)
1 albume
qualche goccia d'acqua
sale
pepe nero in polvere
noce moscata
rosmarino secco
pangrattato (dipende di quanta carne userete)
( gluten-free: usate il vostro preferito, io uso il "pan gratti" di Schar)

Mettete a riscaldare sul fuoco medio alto un tegame forte largo e basso.
Nelfrattempo, sbattete l'albume in un piatto e aggiungete qualche goccio d'acqua. Continuate a sbattere con una forchetta fino a renderlo spumoso. Aggiungete il sale e le spezie.
Mettete il pangrattato su un piatto o un tagliere.
Passate ogni fetta di pollo prima nell'albume e poi nel pangrattato.
Sulla teglia, gia ben riscaldata, aggiungete uno/due gocce d'olio leggero e spalmatelo con un tovagliolo di carta. Adagiatevi sopra le fette di pollo impanate. Fate cadere non piu di un leggerissimo (quasi invisibbile) filo d'olio su ogni fetta e con lo stesso tovagliolo distribuitelo sulla superficcie della carne. Coprite con un coperchio e cuocete per circa 4-5 minuti o fino a che la parte sotto delle cotolette e bella dorata. Giratele, coprite di nuovo e cuocete fino alla doratura.
Trasferite nei piatti da portata e servite subito con un insalata fresca.

Variante: Per evitare il sale, al posto suo potete aggiungere uno/due gocce di salsa di soia. Ma se siete intolleranti al glutine e meglio prima essere sicuri del contenuto della salsa di soia che usate perche e molto probabbile che sia contaggiata.




The italian breaded chicken fillet most beloved of all Italians (and not only) in a version without guilt. I can assure you that the taste is even better because it is lighter, without excess of oil. There are two years now that I use to prepare my chicken fillet this way. My husband likes it too. Even if sometimes he miss the classical fried chicken, he can notice the difference in the sensations after one and other ways to cook it.
Fried: swollen belly. Grid: slight tummy. Fried: a single chop. Grid: two ^_^ You'll need to make just a few changes to prepare this light version of the italian breaded chicken fillet.


Italian Cotoletta (guilt free version)


ingredients:
chicken fillets (how much depends of how many you want to prepare)
1 egg white
a few drop of water
salt
a dush of black paper
a dush of ground nutmeg
some dry rosemary
extra fine bread crumbs (depends of how many chicken fillets you'll prepare)
(gf: use you favorite gf bread crumbs)

First of all, you'll need a large non stick skillet. Pour it over a medium high heat.
Beat the egg white lightly in a deep dish. Add the water drops. Add the salt and the spices and beat againwith a fork until bubbles forms.
Pour the bread crumbs onto a large plate or a cutting table.
Roll well each chicken fillet first into the egg white, then into the bread crumbs.
At this point your non stick skillet will be hot enough. Add not more that two drops of light corn oil on it and grease the bottom by helping you with a paper napkin. Place on the breaded chicken fillets. Grease very lightly the top of each piece of meat. Cover and allowto cook for about 5 minutes, or until the down part of the fillets are lightly brown and crispy. Flip them, cover and cook again until golden brown on the other side too. Place the ready chicken fillets, so called "Cotoletta", into a serving plate and serve immediately with a fresh salad.

Variation: To avoid the salt in this recipe you can substitute it with a few drops of soy sauce. But if you have a celiac disease it'll be better if you check well the ingredients list of the soy sauce you use because very often the commercial ones contain gluten.
