Parfait ai mirtilli


ingredienti: per circa 6 parfait
base:
3uova
1/2 tazza zucchero di canna
1/2 tazza farina mix C (farina per dolci)

parfait:
250 g yogurt bianco (soia)
1 baratolo marmellata di mirtilli (circa 250 g)
2 cucchiai d'acqua

Sbattete le uova con lo zucchero con il mixer eletrico per circa 10 minuti, fino a che diventano un composto gonfio e denso. Aggiungete la farina e continuate a battere per altri 5 minuti. Trasferite il composto in una teglia quadrata e larga a bordi bassi, ricoperta da carta da forno. Infornate a 160° in forno preriscaldato per circa 15-20 minuti. Quando e pronta la base, toglietela dal forno e lasciate da parte fino a che si raffredda comletamente.
Coprite il piano di lavoro con carta da forno pulita. Girate la base sopra la carta e togliete la carta della cottura. Tagliate dei cerchi con il top del bicchiere in quale sarà poi il dolce. Buccherellate con una forchetta molto bene i cerchi.
Trasferite la marmellata di mirtilli in una casseruola e aggiungete l'acqua. Portate tutto a bollore a fuoco dolce. Dopo la bollitura lasciate sul fuoco qualche altro minuto fino a che la marmellata si sciogle e diventa come un sciroppo. Mettete 1 cucchiaio di yogurt sul fondo dei bicchieri, coprite con un cerchio (ben buccherellato) dalla base, pou coprite bene con sciroppo caldo di mirtilli (assiguratevi che lo sciroppo inzuppa bene la base, se e necessario buccherellate ancora con la forcetta). Coprite con 2-3 cucchiai di yogurt, ancora un cerchio di base, inzuppatelo con lo sciroppo e finite con lo yogurt. Decorate a piacere. Trasferite i bicchieri nel frigorifero e lasciate il dolce che si raffreddi per almeno 4 ore.
Quando faccio questo tipo di dolci io preferisco a farli sempre la sera e lasciarli in frigorifero tutta la notte, per servirli poi dopo pranzo. Questo e il tempo ottimo secondo me.





Blueberry Parfait


ingredients about 6 parfait:
3 eggs
1/2 cup light brown sugar
1/2 cup cake flour (gf: mix C)

1 jar blueberry marmalade (about 250 g)
2 tbsp water
250g plan yogurt (soy)

Turn on oven to 160°C. Line a swees roll square baking pan with a baking paper. In a large mixing bowl beat eggs with the hand electric mixer, add the sugar and beat about 10 minutes until it's fluffy and dense consistency. Add the flour and continue to beat about 5 more minutes until it's completely dissolved. Pour batter into the prepared baking pan and bake about 15-20 minutes. Remove from the oven and allow to cool completely. Cover the working surface with a clear baking paper and turn the base onto it. Peel off the top baking paper. Cut into a cirkles with the top of the glass were your dessert will be. Pit the cirkles very well with a fork.
Pour the blueberry marmalade and the water into a deep saucepan and put over low heat. Bring to a boil and cook stirring occasionally about a minute until the consistency of the marmalade turns into a liquid sauce.
Pour 1 tbsp yogurt on the bottom of the serving glasses, cover with a base cirkle, cover with the hot blueberry sauce (be sure that the blueberry sauce is soaking the base well, pit it more with the fork if it needs), cover with 2-3 tbsp more yogurt. Repeat again with cirkle, blueberry sauce and finish with yogurt. If you have some more blueberry sauce rest garnish with it or you can melt a milk chocolate or just grate some over the top. Pour the glasses in the refrigerator and chill at least 4 hours. When I make these desserts I prefer to do everything the night before and to chill overnight. I think this is the perfect time for the dessert to be served after lunch the next day.
